Protein Packed Chia Pudding Recipe

This is a fantastic recipe when you are prepping for the week!

Protein Packed Chia Pudding:
Makes 4 servings

Ingredients:
1 cup milled flax and chia mixed
1.5 cup water (or milk of choice)
4 T cottage cheese
4 T collagen powder
Handful: Berries of choice, nuts of choice
4 T honey

Directions:
Mix the chia and flax with water, cottage cheese, and collagen. Stir well and divvy out into four separate containers.
Top evenly with berries, nuts and honey.
Prep and pop in the fridge for easy breakfasts and snacks throughout the week.

The US Health Crisis

Part of the reason I chose to graduate with a degree in Nutrition and Exercise Physiology was because of the health crisis the US is currently in.

I'm talking record deaths from heart disease, type II diabetes, obesity- diseases that did not exist 70 years ago.

I felt compelled to help people understand what eating better looked like. I just didn't know that it's not that most people don't know what to eat, they don't know how to get it on the table.

"Yes, I know I should be eating vegetables, but all I have time for is the drive-thru or anything that delivers".

It was a painful cycle to watch; a cycle so many Americans are locked into that has the power to kill.

Foods of convenience do not care about your health.

I felt scared for our nation, so I decided to do something.

I wanted to teach people that there is a simple way to get health on their table each night.

What I Eat in a Day

These "what I ate in a day" are a lot of fun (for me ). This was a typical day for me:

I started with a green smoothie; this one was zucchini, spinach, flax, avocado, spirulina, and collagen.

For lunch, I mixed half a can of tuna with whole grain mustard and Trader Joes everything but the bagel seasoning. I used sliced zucchini like chips and dipped it into the tuna salad alongside some hummus.

Ever since I brought the cheese cracker recipe on Show Me St.Louis I have been eating them non-stop. So good! I snacked on those in the afternoon. They are perfect when you want something salty and crunchy, but don't want all the carbs.

For dinner, I had sliced romaine, the other half of the can of tuna mixed the same as at lunch with steamed broccoli (topped with parmesan cheese ).

This is my favorite way to eat; tons of green veggies balanced with protein and a little cheese

Challenge Yourself

I remember when I was first getting started as a business owner. I couldn’t wait to get through the problems I was experiencing to the other side where they would no longer burden me.

Some of those issues took me over a year to work through: fear of getting started, worry over quitting my job, anxiety that no one would like my product.

When I got to the other side of those issues though, there was only momentary relief, and then....more problems to work through! More fear, worry, anxiety, doubt.

The grass is never greener my friends! Do things in your life because they are important to you, not because you think they will magically make your life better.

This is something I’m carrying with me as I lose weight, too. I’m not doing it because I think a thinner body will magically give me confidence or make me happier. Keep on pushing!

I recently had the incredible opportunity of speaking with the students of Missouri Baptist University about building a business post graduation. What an honor!

I told them how I experience a ton of fear and anxiety when I first started Basically It Meals. But, they cannot let those emotions slow them down or prevent them from going after what they want.

As soon as you move through the fear and anxiety of one issue, they pop up again over something else! It is part of life. There will always be big and scary challenges; weight loss, starting a gym habit, getting out of a relationship or quitting a job.

You have two options: give in because the fear and anxiety are too much, or accept they are part of life and move towards your dream.

The best things in life are born when you put yourself outside your comfort zone and move forward despite the unknown. It can be terrifying, but it's that very bravery that make dreams a reality! Remember to keep pushing through the doubt...

Low-Carb Cheese Crisps

I always have such a good time at Show Me St.Louis If you missed it my latest Recipe Of The Day segment on Fox 5 check it out here!

I love this super easy and delicious low carb cheesy cracker recipe:

-Preheat oven to 350
-Cut a block of cheddar into small cubes
-Line a baking sheet with parchment paper
-Spread the cubes out on the tray leaving plenty of space in between
-Bake for ~25 minutes until cheese has formed a crisp cracker.

Serve and enjoy!!
